docs: add developers with specialized roles to portfolio list

Add 14 new portfolio entries highlighting developers with specific roles:
- UX/UI designers
- Frontend developers
- Full-stack developers
- Design engineers
- Creative developers

Each entry includes their role/specialty in square brackets for better context.
